Stony Brook WholeHeartedFoods in the Finger Lakes region of New York has been selling excellent pumpkin- and squash-seed oils for several years. Now they are putting the whole seeds to another use, as snack fare. Pumpkin and butternut squash seeds are brined to soften the hulls, then roasted. They come plain and seasoned with maple or chile.
