Until recently there has not been a great deal of news about gluten. In fact, most people had probably never even heard of this substance even though it has been a natural part of most daily diets. When Celiac disease emerged this caused a rise in the study of gluten and its potential health effects. Now, all of the sudden everyone is talking about this natural protein.
